We do breakfast a little differently at the Times House. In the comfort and privacy of your room or suite, at a table set with china and silver, our guests enjoy a delicious Continental Breakfast with home-baked scones, breads, cakes, homemade granola, yogurt topped with fresh fruit and our own Times House blend of Covered Bridge Roasters coffee.
I like to think I’ve inherited some of my Aunt Cass’ baking skills and owe it to her for my baking rave reviews online. Long before I ever heard of Martha Stewart, our family had my Aunt Cass – the ultimate hostess and baker. Our guests at the Times House have enjoyed and asked for her Apple Cake recipe for years. I hope you’ll enjoy it too. – Diane Prokop
Ingredients:
• 4-5 apples
• 1/3 cup sugar
• 2 tbs. cinnamon
• 1 3/4 cups sugar
• 1 cup oil
• 4 eggs
• 3 cups flour
• 3 tsp. baking powder
• 2 1/2 tsp. vanilla
• 1/2 cup orange juice
Procedure:
Peel and cut 4 to 5 apples, add 1/3 cup sugar and 2 tablespoons cinnamon. Mix together in bowl. Set aside. Blend together the remaining ingredients with electric mixer.
Layer 1/2 batter, 1/2 apple mixture and repeat. Aunt Cass’ recipe calls for a tube pan but I use a mini-loaf pan just the right size for sharing.
Bake at 350 degrees for approximately one hour-fifteen minutes until golden and toothpick comes out clean.
